
| Pulled Pork Sandwiches 1 - (5 to 7 pound) pork roast, preferably shoulder or Boston butt Dry Rub: 3 T paprika 1 T garlic powder 1 T cumin 2 T brown sugar 1 T dry mustard 3 T coarse salt Mopping Sauce 1 cup white vinegar 1 cup apple juice or cider 1 T dark brown sugar 1 T red pepper flakes 1 T cracked black pepper 1 T salt BBQ Sauce Classic Coleslaw Mix the paprika, garlic power, brown sugar, dry mustard, and salt together in a small bowl. Rub the spice blend all over the pork and marinate for as long as you have time for, as little as 1 hour or up to overnight, covered, or in a large zip lock bag. in the refrigerator. Mix the mopping sauce ingredients in a jar, stirring or shaking until the sugar and salt are dissolved. Store in the refrigerator overnight. Preheat the oven to 250 degrees F. Put the pork in a roasting pan and bake, basting with the mopping sauce every 30 to 45 minutes, for about 6 to 8 hours, or until it's falling apart Remove the pork roast from the oven and transfer to a large platter. Allow the meat to rest until cool enough to handle.. While still warm, with your hands or 2 forks, "pull" the meat to form shreds. Put the shredded pork in a bowl. Pour enough of the sauce on the shredded pork to coat and mix well. To serve, spoon the pulled pork mixture onto the bottom 1/2 of the hamburger bun, and top with the slaw. Serve with the remaining sauce on the side. |
