| Waldorf Turkey Salad A wonderful way to use up some of that leftover Thanksgiving turkey. 3 medium red delicious apples (about 2 to 2 1/2 cups (cubed) a splash of lemon juice 1 cup diced cooked turkey 1/2 cup craisins 1/2 cup thinly sliced celery 1/2 cup coarsely chopped, toasted walnuts 1/2 cup mayonnaise or Miracle Whip 1 T sugar 1 dash salt mixed salad greens Wash apples; core and cut into 1/2-inch cubes. Do not peel. Sprinkle cubed apples with lemon juice and toss to coat. Add turkey, craisins, celery and nuts. Toss. Combine mayonnaise, sugar and salt. Add to apple mixture, toss to coat. Serve on mixed salad greens. |
