| Hot Wings 2 lb. cut up chicken wings salt and pepper 2 T vegetable oil ½ cup hot sauce 1 to 2 T. melted butter Preheat oven to 425. Spray a large baking sheet liberally with vegetable spray. Lower the oven rack to the bottom position. Place the chicken wings on a kitchen towel and pat dry. Sprinkle with salt, pepper and cayenne pepper. Pour 1 to 2 tablespoons oil over and toss to coat. Transfer to the baking sheet. Spread in a single layer. Bake for 30 to 45 minutes, turning once after 15 minutes. Mix the hot sauce and the butter in a bowl. As soon as you take the wings from the oven, transfer them to the bowl and toss in the sauce. Serve with blue cheese dressing. These get even better if kept in a warm oven (200 degrees) until serving time. If you like them hotter, add cayenne pepper 1/4 tsp. at a time to the sauce. |
