| Bacon Wrapped Chicken 6 boneless skinless chicken breasts halves 1 (8 oz) cartons chive and onion cream cheese 6 slices of bacon salt (to taste) and fresh ground pepper 1 1/2 T butter Preheat the oven to 400 F. Between two sheets of wax paper with a mallet, pound chicken breasts to 1/2 inch thickness. Spread 3 tablespoons of cream cheese over each chicken breast. Dot with butter and season with salt and pepper. Roll up each breast, folding in the sides, wrap with bacon and stick a toothpick through to hold it together. Place on a baking sheet that has been sprayed with cooking spray. Bake uncovered for about 30 minutes (or until juices run clear). Turn on the broiler and broil 6 inches from the heat for a few minutes until the bacon is crispy. Serves 6 |
