Rice Pudding
1 cup
cooked rice
2 1/2 cups milk, divided
1/2 cup granualted sugar
1 egg, beaten
2/3 cup raisins
1 Tbsp. butter or margarine
1/2 tsp. vanilla extract
Dash cinnamon
Combine
rice, 2 cups of the milk, sugar and salt in a heavy saucepan. Cook over medium
heat, stirring occasionaly, until thick and creamy,
15 to 20 minutes. Blend remaining 1/2 cup milk with the egg. Stir into the rice
mixture. Add raisins. Cook 2 minutes longer, stirring constantly. Add butter
and vanilla. Spoon into serving dishes. Sprinkle with
cinnamon.
Make 4
servings.
Medium
or Short grained rice makes a creamier pudding.
