Simple Syrup

1 part sugar
1 part water

Combine in a saucepan and heat until sugar is dissolved.  Cool completely.  Store in a glass jar in the refrigerator.  It keeps indefinitely.
Use 1 to 2 tablespoons in your drink.
*If you want a thicker, sweeter syrup, use 1 part sugar, 1/2 part water.

This syrup can be flavored many ways for use in cooking and drinks.  Keep a jar of plain simple syrup in the refrigerator to sweeten drinks.  Also used to moisten cakes, use in salad dressings and fruit salads.  

If you want a darker syrup, add a little brown sugar .  This would be good for the vanilla or cinnamon syrups.

Add 1 or 2 teaspoons of vanilla extract per cup of water used for a vanilla syrup or add a couple of split vanilla beans.
Add maple flavoring (Mapeline) for pancake syrup (you might want to make the thicker syrup for this)
Cinnamon Syrup:  add about a teaspoon of ground cinnamon to the water and sugar in the pan, or a couple of cinnamon sticks. 
Use hazelnut or almond extract or peppermint, or some lemon zest (be sure to strain it after it steeps) or lemon grass. 
Using fresh herbs you'll need about a half cup per cup of hot simple syrup.  Strain before storing.
Experiment with other flavors, spices, and extracts to find the ones that suit you best.
