1 egg
1 1/4 c. buttermilk
1 tsp. vanilla
2 tbsp. melted butter
1 1/4 c. all purpose flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Combine egg, milk, vanilla and butter. Mix dry ingredients together. Add to liquids and beat with whisk until all the flour is moistened. The batter will be slightly lumpy.
Pour about 1/4 cup of batter on a greased, hot griddle. Cook until pancakes are golden brown, turning only once. Makes 16 (4") pancakes.

Note:  If you don’t have buttermilk, add 1 tablespoon  white vinegar to regular milk and let stand for 5 minutes.  It will thicken slightly.
