| Cheryl's Banana Bread 1 stick butter, softened (room temp) 1 cup sugar 2 eggs 1 t. vanilla 3 T. buttermilk* 3 very ripe bananas, mashed 2 cups flour 1/4 t. baking powder 1 t. baking soda 1/2 t. salt |

Preheat oven to 325. Grease (you can use spray) a loaf pan. With an electric mixer, cream together butter and sugar. Add eggs one at a time, beating until light and fluffy. Add vanilla, milk and bananas. Beat together until well blended. Combine flour, baking powder, baking soda and salt. Add to banana mixture and beat until thoroughly mixed. |

| Pour into the loaf pan and bake for 50 to 60 minutes or until top springs back when lightly touched. Cool completely on wire rack before removing from pan. You may fold in some chopped nuts before putting the batter in the pan, if desired. *if you don't have buttermilk, you can use 3 T milk and 1 tsp. white vinegar. Combine and allow to stand 5 minutes, it will thicken slightly. |
