Meatloaf

1 1/2 lbs. ground beef
1 large egg, slightly beaten
2 T ketchup
1 pkg. dry onion soup mix
2 T grated onion
2 garlic cloves, minced
3/4 cup dry bread crumbs, plus more if needed
1/2 tsp. salt
1/4 tsp. pepper
1/3 cup ketchup

In a large bowl, combine all ingredients, except the 1/3 cup ketchup.  Mix well with your hands, adding more bread crumbs if needed to make sure the meat holds it shape when formed.  Test by making a ball.  Shape into a free form loaf and place in a baking pan that has been sprayed with vegetable spray.  Cover with foil and refrigerate for at least 1 hour.  You can make this the day before or the morning you need it as well.
When ready to bake, take the meatloaf out of the refrigerator and preheat the oven to 350.
Spread the remaining 1/3 cup ketchup on top of the loaf and bake, uncovered for 1 hour or until it feels firm to the touch.
Remove from the oven and let rest 10 minutes before cutting.
