| Black Bean Chili When it's cold outside, this chili will warm you up. 1 lb. ground beef 1 onion, chopped 1 green pepper, seeded and chopped 3 cloves garlic, minced 1 to 3 T chili powder 1 1/2 tsp. ground cumin 1/2 tsp. dried oregano 1/2 tsp. dried cilantro salt and pepper 2 T tomato paste 1/2 cup water (more if needed) 2 - 15 oz. cans tomato sauce 1 - 15 oz. diced tomatoes 2 cans black beans, drained and rinsed In a large pot, brown the ground beef, add the onions, garlic and peppers and cook until tender. Add seasonings and tomato paste, cook for 2 more minutes. Add the tomato paste, water, tomato sauce and diced tomatoes. Bring to a boil, turn down to a simmer, cover and simmer for 30 minutes or more. Add the beans and simmer 20 more minutes. Serving Suggestion: Offer shredded cheddar cheese, sour cream, sliced green onions and tobasco sauce on the side. Also serve with corn bread and honey butter. |
