Cheese Puffs are always a favorite at parties.  This is a quick and easy recipe.  They would also be great as an accompaniment to a special breakfast or brunch.

2 T unsalted butter, melted, divided
1 cup flour
1/2 tsp. dried thyme leaves
Salt and ground black pepper
1 cup grated Parmesan or Romano cheese
1 cup milk
3 eggs

Preheat oven to 450 F.
Prepare mini muffin pans by spraying each cup with nonstick cooking spray and brushing each with melted butter.

In a bowl, whisk together the flour, thyme, salt, pepper and cheese.  In a blender, blend the milk and eggs until combined. Add the dry ingredients to the blender and process about 2 minutes until batter is smooth and air is incorporated.

Pour the batter evenly into the muffin cups, filling about halfway. Bake until puffed and deep golden brown, about 20 minutes. Cool in the pan for 5 or 10 minutes then remove while still a little hot. Serve warm.
Yieldss 2 1/2 to 3 dozen
