No Buttermilk?  No Problem!
If you need buttermilk for a recipe but don't have any on hand, you can make a substitute for it that works for baking, pancakes and even for salad dressings.  For 1 cup of buttermilk, measure 1 cup of milk, remove 1 tablespoon and add 1 tablespoon of white vinegar (or you can use lemon juice).  Let stand for 5 minutes.  It will thicken slightly.  If you need a small amount, just measure the amount of milk you need a little shy and add a little vinegar, don't forget to let it stand 5 minutes.

To substitute chocolate chips for sweetened squares, it's better to weigh them, but if you don't have a scale, 3 tablespoons chocolate chips = 1 square (1 ounce)
