| Gazpacho Soup 1 small red onion, chopped roughly 2 cloves garlic, chopped 1/2 seedless cucumber, chopped roughly 1 stalk celery, chopped roughly 1 jalapeno or green pepper, chopped roughly 2 cans diced tomatoes 1 tsp. salt pepper vegetable juice (like V8) hot sauce chopped fresh parsley or cilantro Put the onion, garlic, cucumber, celery and pepper in the food processor. Pulse until chopped fine but not pureed. Transfer to a large bowl and add the tomatoes, salt and pepper. Add vegetable juice to desired consistency and add hot sauce to taste. Chill. Garnish with parsley or cilantro. |
