| Snow Cones 2 c. sugar 3/4 c. water 1 pkg. unsweetened Kool-Aid Bring sugar and water to a full boil. Remove from heat and stir in Kool-Aid. Chill well. Pour over a glass of crushed ice. |
| Cinnamon Dip (for fresh fruits) 8 oz. sour cream 1/4 cup honey 1/4 tsp. ground cinnamon Mix all ingredients. Chill until ready to serve with your favorite fruits. Makes 1 cup |
| Ricotta Dip (for fresh fruit) 1/3 cup part-skim Ricotta cheese 1 T sugar 1 tsp. orange zest 1 T orange juice 1/2 cup vanilla low-fat yogurt Assorted fresh fruit, cut up Combine Ricotta cheese, sugar, orange peel and orange juice in blender or food processor. Cover and blend until smooth. Stir cheese mixture into yogurt. Chill up to 24 hours. Serve with assorted fresh fruit. |
| No Bake Cookies 2 cups granulated sugar 1/2 cup evaporated milk 2 tablespoons cocoa 4 ounces butter (1 stick) 3 tablespoons peanut butter 1 teaspoon vanilla extract 1/2 cup chopped pecans 2 1/2 cups quick-cooking oats Combine sugar, milk, cocoa, and butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla, peanut butter, and chopped nuts. Add oatmeal and stir to blend thoroughly. Drop by teaspoonfuls onto waxed paper. Makes about 4 dozen no bake chocolate oatmeal cookies. |
| Frozen Pudding Pops Simply take ordinary store-bought pudding cups and pierce the tops with wooden popsicle sticks. Place the pudding cups in the freezer, and after they are frozen, remove the paper lids, and pop them out of the plastic containers. These frozen treats are fast and easy to make. |
| Chocolate Frozen Bananas 8 medium bananas, peeled 8 wooden popsicle sticks 32 ounces semisweet chocolate, chopped or chips 4 tablespoons unsalted butter Dipping decorations: granola, chopped nuts, sprinkles, jimmies, crushed cookies, and toasted coconut Line a sheet pan with waxed paper. Cut 1-inch off the end of each banana. Insert a popsicle stick into the cut-end of each banana, pushing the stick halfway in, leaving the other end exposed for use as a handle. Place the bananas on the sheet pan and freeze 1 hour. |
| Fruity Juice Pops A juice and fruit pop. You make these by using the blender and mixing orange juice with canned peaches or pears (drained) and then putting the mix into the popsicle molds to freeze. |
| Make your own Slushies! Place 1 cup water, 1/2 cup of your favorite flavor Kool-Aid soft drink mix (the pre-sweetened variety), and 1 cup ice cubes in a blender container; cover. Blend on high speed until smooth. Add an additional 2 cups ice cubes; cover. Blend, using pulsing action, until smooth. Serve immediately. Store leftover slush in the freezer. Recipe makes 7 (1/2 cup) servings. or: This one you’ll need an ice cream maker for. Use soda (orange, grape, root beer or strawberry are good choices) in the freezer bowl of your ice cream maker to make your slushies. If your ice cream maker makes 1 1/2 qts., use 2 cans of soda. Depending on your machine, it should take about 15 to 20 minutes. Serve with a spoon and a straw. I like to use the disposable paper or plastic cups. What a treat on a hot summer day! *Do not use sugar free soda, it doesn’t work. |
| Fruit Pizza 1 pkg. sugar cookie dough Spread on 12 inch pizza pan. Bake 350 degrees until golden brown, about 12-15 minutes. Cool. Filling: 2 (8 oz.) cream cheese 2/3 c. Powdered sugar 1 tsp. vanilla Mix ingredients. Spread over cookie dough like tomato sauce on pizza. Arrange sliced fruit around pizza. Suggestions of Fruit: Sliced: bananas, strawberries, kiwi, pineapple, mandarin oranges, also grapes, blueberries, raspberries or any of your favorite fruits. You can sprinkle the top with shredded coconut or grated white chocolate to look like cheese. |
| Peanut Butter Crunchies 3 cups sugar 1 1/2 cups dark corn syrup 3 cups peanut butter 15 cups corn flakes Combine sugar and syrup; bring to a boil stirring constantly. Remove from heat. Add peanut butter and corn flakes. Mix well. Spread mixture onto a greased cookie sheet. Cut into squares. |
| Root Beer Frosty 1/2 cup milk 6 ounces root beer 1/4 cup vanilla ice cream 3/4 cup ice cubes 1/2 teaspoon pure vanilla extract Place all in a blender or food processor. Blend 30 seconds or until smooth. Pour into glasses. Makes 2 servings. |
| When you've got fresh grapes in the fridge that no one seems to be eating fast enough, pop them in the freezer. On a hot day, take them out for a frozen treat for the kids. It's almost like candy! Do the same with blueberries. |
