2 1/2 pounds baking potatoes 1 T vegetable oil (or enough to coat fries) 1 tsp. salt 1/4 to 1/2 tsp .ground cayenne pepper Preheat oven to 400 F. Scrub potatoes well and cut into 1/2 inch thick fries. Soak in a bowl of cold water mixed with a teaspoon of white vinegar. The vinegar helps the fries crisp in the oven. When ready to bake, drain the potatoes and dry VERY well with kitchen towels. In a large mixing bowl, toss potatoes with oil, salt and red pepper. Spread on baking sheet in one layer. Bake for 30 minutes in the preheated oven, or until potatoes are tender and browned. Serve immediately. |
