1 1/2 cup jasmine rice
1 cup water
1 - 15 oz. can coconut milk
1/4 cup coconut (not sweetened), toasted
pinch of salt

Place the rice in a wire mesh strainer and rinse under cold running water for 1 minute.
In a large saucepan over high heat, combine rice, water, coconut milk and salt; bring to a  boil.  Reduce heat, cover and simmer for 20 to 25 minutes, or until liquid is absorbed and  rice is tender.
Remove from the heat, transfer to a serving bowl, add the toasted coconut and fluff with a  fork while mixing well.

Great served with a curry dish.
