Salmon in Puff Pastry

4 salmon fillets, check for bones
1 (10 ounce) box of chopped spinach, defrosted and squeezed dry
1 onion, sliced thin
1 box of defrosted frozen puff pastry sheets
1 lemon, thinly sliced
1 egg
1 T water

Preheat the oven to 425.
Mix the egg with the water and set aside.
Roll out pastry slightly on a floured surface and cut each in half.
Season each salmon with salt, pepper.
Place one lemon slice on each pastry. Then place some of the sliced onion, then 1/4 of the spinach and top each with one salmon fillet. Wrap the pastry around like a package, sealing the edges, using the egg wash as glue.
Place onto a baking sheet seam side down and brush with the egg wash.
Bake for 15 to 20 minutes until puffed and golden.
