Salmon Cakes

2 T butter
1/4 cup finely chopped onion
1/4 cup finely chopped green and/or red bell pepper
1 or 2 cloves of garlic, minced
1 - 15 oz. can salmon, drained (reserve the liquid), discard bones and skin
1 egg, beaten lightly
1 tsp. Old Bay seasoning
1/2 cup bread crumbs
1/2 tsp. salt
1/4 tsp. pepper

In a skillet, melt butter and sauté onion, peppers and garlic until tender.
In a bowl combine the remaining ingredients and add the onion mixture.  Mix well, adding some of the reserved liquid from the salmon if needed.
Form into patties and refrigerate until ready to cook, this helps them hold together better when cooking.
Heat two tablespoons of vegetable oil in a large skillet and fry the patties about 4 or 5 minutes per side or until browned.  The patties are very delicate until cooked, be gentle when turning them.
Serve with
Tartar Sauce
These are great served on buns too with lettuce, tomato and tartar sauce.
