| Beer Battered Fish 1 1/2 cup all-purpose flour 1 teaspoon salt pepper 1 cup beer 1 1/2 to 2 pounds firm white fish fillets Vegetable oil for deep frying Heat deep fryer to 375*F In a large bowl, mix together 1 cup flour, salt, pepper, and beer, mixing well. Put the other 1/2 cup flour in another bowl or shallow dish. Dredge each piece of fish in the flour, shake off excess, then in the batter mixture, coat well. Place fish in hot oil, and fry until golden brown. Drain on paper towels or a wire rack. Sprinkle with salt immediately after removing from the oil. Serve with Tartar Sauce Be careful not to overcrowd the deep fryer. Cook fish in batches to maintain oil temperature. Keep warm in a 200 degree oven. Makes 6 servings. |
