1 cup mayonnaise 3 fresh garlic cloves, grated with a microplane, pasted or finely minced 1/2 T fresh lemon juice 1/4 tsp. salt In a small bowl, combine all ingredients. Cover and chill well before serving to give the flavors enough time to develop. My favorite way to prepare the garlic is to use a microplane, but you can also use a garlic press or mince and mash to a paste with a pinch of salt using a large heavy knife or use a mortar and pestle. Flavor variations: Chipotle - Add one tablespoon of minced canned chipotles in adobo sauce Roasted Garlic - substitute 1 large head of roasted garlic for the 3 garlic cloves To serve from a squeeze bottle, add a little water, milk or more lemon juice just enough to thin it out. |
