| Mustard Sauce 2 T butter 2 T flour 1 tsp. dry mustard 1 cup milk, heated salt and pepper nutmeg (optional) Combine dry mustard and flour Melt butter in a saucepan over medium heat. Add flour mixture and stir until mixture is well blended. Gradually stir in hot milk. Cook over medium heat, stirring constantly, until sauce begins to boil and thickens. Simmer, stirring frequently, over very low heat for 5 minutes. Season with salt and pepper to taste and add a little nutmeg, if desired. This sauce is especially good with fish and chicken. Makes about 1 cup of medium thick sauce. |
