| Mornay Sauce 2 T butter 2 T flour 1 cup milk, heated salt and pepper 1/2 cup grated cheese of your choice Melt butter in a saucepan over medium heat. Add flour and stir until mixture is well blended. Gradually stir in hot milk. Cook over medium heat, stirring constantly, until sauce begins to boil and thickens. Simmer, stirring frequently, over very low heat for 5 minutes. Remove from the heat and add the grated cheese, stir until cheese is melted. Season with salt and pepper and a little mustard or Worcestershire sauce to taste. Makes about 1 1/2 cups of medium thick sauce. |
