| Mom's Enchilada Sauce 1 T. chili powder 1 t. garlic powder 1 t. onion powder 1 t. salt 1 t. sugar 1 t. cumin 1/2 t. dried oregano 1/4 t. cayenne pepper 2 T. vegetable oil 2 T. flour 2 cups water 1 - 8 oz. tomato sauce Mix all seasonings and set aside. In a saucepan, mix oil and flour, heat, stirring occasionally, until browned, about the color of turkey gravy. Add seasonings, water and tomato sauce. Bring to a boil, boil for 1 minute, reduce heat. Simmer uncovered until desired consistency. This sauce is medium heat to me. Adjust the heat by adjusting the amount of cayenne pepper. Omit it if necessary, you can add some if needed when the sauce is done. |
