| Grilled Lemon Chicken for Two 2 boneless, skinless chicken breasts 2 T vegetable oil 1 garlic clove, minced fine 1/2 tsp. dried thyme leaves 1/4 tsp. rosemary, chopped 1/2 tsp. salt 1/4 tsp. pepper juice and zest of 1 lemon Mix all the marinade ingredients in a large zip lock bag or a bowl. Add the chicken and turn to coat. Let marinate for 1 hour, turning after 30 minutes. Heat a grill pan over medium high heat. Grill chicken for 4 or 5 minutes per side, depending on the thickness. Remove from heat and let stand for 5 minutes before slicing or serving. Double the recipe for a larger group or cut each chicken breast to feed four. |
