| Fried Chicken 8 to 10 pieces of chicken 1 cup flour 1/4 cup yellow corn meal 1 tsp. garlic powder 1 tsp. onion powder 2 tsp. paprika 1 tsp. thyme leaves salt and pepper vegetable oil for frying Combine the flour, corn meal, garlic and onion powders, paprika, thyme and salt and pepper. In a large, deep skillet, heat 1 - 2 inches of vegetable oil to 350 degrees. Dredge each piece of chicken in the flour mixture, coating it well and shaking off the excess. Carefully place the chicken pieces in the hot oil, being careful not to over crowd the pan, you'll need to fry in 2 or 3 batches. Fry for about 15 minutes, turning as needed until browned. Remove from the oil and place on a wire rack positioned over a baking sheet, sprinkle with salt and keep in a preheated 250 degree oven until serving time. |
