| Preheat oven to 325. Lightly spray bottom of 9 x 13 pan. Sprinkle rice evenly over the bottom. Mix the soup and the broth together and pour over the rice. Sprinkle peas and carrots, if using, over the rice and soup. Lay chicken on top. Salt and pepper chicken. Sprinkle soup mix over top. Cover tightly with foil and bake for 1 1/2 hours. Don’t peek! The recipe can easily be doubled. |
