This is a very easy recipe that was created on a night when I had nothing much to work with (or so I thought). I used Spam, but ham would work just as well (or better for all you Spam haters). My family just loved this dish. The balance of salty and sweet with just a little heat from the rice mix really worked together well. 2 T butter 1 onion, diced large 1 - 12 oz. can Spam, diced large 1 - 8 oz. can pineapple chunks, drained, reserving liquid 1 - 14 1/2 oz. can diced tomatoes, drained, reserving liquid 1 - 8 oz. box Zatarans Dirty Rice Mix 1 - 15 oz. can black beans, drained and rinsed In a saucepan, over medium high heat, melt butter, add onions and saute until slightly softened. Add spam and pineapple, saute until heated through. Add tomatoes. Measure reserved liquids from the tomatoes and pineapple and add enough water to measure 2 1/2 cups. Add to saucepan with vegetables and meat. Bring to a boil, add contents of Dirty Rice Mix package, stir. Bring back to a boil, reduce to a simmer, cover and cook for 25 minutes. Stir in the beans. Remove from heat and let stand 5 minutes before serving. Serve with corn bread or muffins. |
