1 lb. ground pork
1 1/2 tsp. salt 
1/2 tsp. dried parsley or 1 T fresh
1/2 tsp. rubbed sage
1/4 tsp. ground black pepper
1/8 tsp. nutmeg
1/4 ttsp. dried thyme
1/4 tsp. crushed red pepper
1/4 tsp. ground coriander

Combine all spices and mix with the pork.  Refrigerate overnight before use or package and freeze.
If grinding your own pork, use 1 pound of cubed pork, mix with the seasonings and refrigerate several hours or overnight.  Grind with a meat grinder, package and refrigerate or freeze.

For a hot sausage add 1/4 to 1/2 tsp. cayenne pepper.
