| Dry Rub 1 T. brown sugar 1 T. kosher salt (or 2 t. table salt) ½ t. ground black pepper 1 t. ground cumin 1 t. paprika 1 t. garlic powder 1 t. onion powder Mix together and use for chicken, pork, or beef. Best if rubbed on the meat liberally and allowed to marinate for 1 to 24 hours. Makes about 1/4 cup Add chili powder or cayenne pepper to taste if you want it spicy. For large pieces of meat you might want to double or triple the recipe. |
