Thanksgiving Dinner Disaster Solutions

My turkey is still frozen!
To speed thaw, you can place the turkey in the sink with enough cold water to completely cover. Make sure you don’t remove the original wrapper when you do this. Allow about 30 minutes per pound and change the water every 30 minutes. If the original wrapper has been removed, place the bird in a plastic bag before proceeding.

Turkey is too dry!
Carve the turkey and place the pieces in a baking dish. Heat a can of chicken broth (or turkey broth if you have it) in a saucepan. Pour the broth over the sliced turkey, cover with foil and heat in a moderate oven for 5 to 10 minutes before serving.
Another way is to carve the turkey and arrange on your serving platter. Pour some of the gravy over the slices before serving.

My stuffing is soggy!
Spoon the stuffing onto a sheet pan and spread evenly. Place in a 325 degree oven to dry out for about 15 to 20 minutes or until dried to the consistency you like. Spoon int a serving bowl.

Lumpy gravy!
My favorite solution to lumpy gravy is to use my stick blender for this, you don’t have to transfer the hot gravy from the pan. You can also pour the gravy through a mesh strainer to remover the lumps. Or you can use a food processor or blender to smooth it out.

My pumpkin pie has cracks on the top!
You can easily hide those cracks by spreading some whipped cream on the top of your pie. Swirl into peaks for a fancy look and sprinkle with a little pumpkin pie spice.

I forgot to make the pumpkin pie!
You can still have a pumpkin treat. Use that can of pumpkin for a parfait. Fold some whipped cream into the canned pumpkin and layer with crushed gingersnaps in parfait glasses . Top with whipped cream and sprinkle with more crushed gingersnaps.
