When roasted, garlic becomes sweet and spreadable.  The uses for it are endless!  Use it in sauces, gravies, dips and spreads, salad dressings or just spread it on a cracker all by itself!  Add a couple of heads to your mashed potatoes next time for a change from the usual. 
Roasted Garlic
Preheat the oven to 400.  Cut the top off of a head of garlic, place it on a piece of aluminum foil.. Drizzle some extra virgin olive oil over it and sprinkle with salt and pepper.  Wrap up in the foil and roast in the oven for 30 to 45 minutes.  Let it cool enough to handle, then just squeeze the cloves out of the skin.  Mash with a fork.
