Chocolate Pudding in a Mug

1 tablespoon cornstarch
1 tablespoon cocoa powder
2 tablespoons granulated sugar
3/4 cup milk
1/2 tsp. Vanilla extract

Place the cornstarch, cocoa powder and sugar in a 1 1/2 to 2 cup microwave-safe mug (at least 12 ounces)
Add 3/4 cup milk, and stir to dissolve dry ingredients. Microwave on HIGH for one minute, stir to make sure there are no lumps and cook for 30 seconds more or until mixture boils. Stir in the vanilla extract. Chill in the refrigerator at least 1 hour before eating
