| Pumpkin Bars 4 eggs 1 cup vegetable oil 2 cups sugar 1 can pumpkin puree 2 cups flour 1/2 tsp. salt 2 tsp. cinnamon 1 tsp. baking soda 2 tsp. baking powder 1 cup chopped nuts (optional) Preheat the oven to 350. Grease and flour a 15" x 10" jellyroll pan. In mixing bowl, beat together eggs, oil, sugar and pumpkin until light and fluffy. In a separate bowl, stir together flour, salt, cinnamon, baking soda and baking powder. Add to the pumpkin mixture and mix thoroughly. Fold in nuts. Spread batter in prepared pan. Bake for 25-30 minutes. Cool. Frost with cream cheese frosting. Keep refrigerated. |
