| Oatmeal Cookies 1 cup butter 1 cup brown sugar 1 cup sugar 2 eggs, beaten 1 tsp. vanilla 1 1/2 cup flour 1 tsp. baking soda 1/2 tsp. ground cinnamon 1 tsp. salt 3 cups oatmeal 1/2 cup nuts (optional) Preheat oven to 375 F Cream butter and sugars. Add eggs and vanilla, beating until well incorporated. Sift flour, baking soda, and salt and add to the egg mixture. Stir in oatmeal and nuts. Using a small ice cream scoop or spoon, mound dough onto ungreased cookie sheets, do not flatten. Bake 8 to 10 minutes or until lightly browned. Remove cookie sheet from the oven, let cool a few minutes before removing cookies to a wire rack to cool completely. You may also want to add raisins, craisins, chocolate chips or chocolate covered raisins for variation. |
