| Easy Cheesecake Crust: 1 1/4 c graham cracker crumbs 2 T sugar 1/3 cup butter, melted Filling: 4 - 8 oz. cream cheese, softened 1 cup sugar 4 eggs 2 tsp. vanilla pinch of salt Preheat the oven to 325. Mix the grahm cracker crumbs and sugar. Add the melted butter and combine. Press onto the bottom and partially up the sides of a 9 or 10 inch springform pan. Bake 10 minutes, set aside. Beat the cream cheese until smooth. Add the sugar and beat well. Add the eggs, one at a time, beating well after each addition. Add the vanilla and salt. Pour onto the crust and bake for about an hour or until center is almost set. Check by shaking the pan, if it jiggles just a little in the middle, it’s done. Remove from the oven and run a knife around the edge to loosen, but don’t remove the collar yet. This step helps prevent the top from cracking. Let it cool completely before removing the collar. Top with your favorite pie filling. |
