| Blender Mayonnaise 1 large egg at room temperature 5 tsp. fresh lemon juice 1 tsp. Dijon mustard 1/4 tsp. each salt and pepper 1 cup olive oil or other vegetable oil In a blender with motor on high blend the egg , lemon juice, Dijon mustard, and salt and pepper. Add oil in a stream until completely emulsified. Makes about 1 cup. |
