Sausage Gravy

1 lb. bulk breakfast sausage
1 small onion, diced
2 T butter (optional)
1/4 cup flour
2 cups milk

In a skillet, brown the sausage with the onions.  Add  the butter (if the sausage did not give off much fat) and  flour, cook for 2 minutes.  Add the milk and bring to a  boil.  Reduce the heat and cook until thickened. 
Serve over biscuits, toast or fried polenta.
