Buttermilk Waffles

2 cups all-purpose flour
1 T sugar
1 T baking powder
1/2 tsp. salt
1/2 tsp. baking soda
2 eggs
2 cups buttermilk
1/2 cup (1 stick) melted butter

In a large bowl, combine the flour, sugar, baking powder, salt  and baking soda, and set aside. In a second bowl, beat  together the eggs and buttermilk, and stir in the melted  butter. Stir the wet ingredients into the dry ingredients until  moistened. Do not over-mix. The batter should be a little  lumpy.

Follow the manufacturer's instructions for your waffle maker  as to how long to cook it,  or until steam stops escaping.   Mine cooks for about 7 minutes.

Note:  If you don’t have buttermilk, add 1 tablespoon  white vinegar to regular milk and let stand for 5 minutes.  It will thicken slightly.
