Breakfast Casserole

6 eggs
2 cups milk
12 slices of bread
1 lb.  breakfast sausage
1 small onion, diced
1/2 lb grated cheddar cheese

Spray or butter a 9 x 13 baking dish.  Cut or tear bread into pieces and put in the baking pan.  You can remove the crusts if desired, but it’s not necessary.
Cook the sausage and onion in a skillet, drain and set aside.
Beat the eggs, add the milk and pour over the bread in the baking dish.  Top with the reserved sausage and then sprinkle on the cheese.
Cover with foil and refrigerate overnight.
To bake:
Preheat oven to 350.  Bake covered for 30 minutes, uncover and bake 15 minutes more.
To serve, cut into squares.

*You won’t need salt, the sausage and cheese will provide that, but you can pepper to taste.

To spice it up, you can dice a jalapeno (seeded or not) and sauté with the sausage and onions.
Try using Brioche for the bread to make it a little sweeter and richer
