| Dumplings 1 1/2 cups all-purpose flour 2 teaspoons baking powder 3/4 teaspoon salt 3 tablespoons shortening 3/4 cup milk Whisk together the flour, baking powder, and salt in a mixing bowl. Cut in the shortening with a knife or pastry blender until the mixture resembles fine crumbs. You can refrigerate the mixture at this point until ready to cook. Make a well in the center of the flour mixture and pour in the milk. Gently stir the milk into the flour mixture just until moistened. Dough will be slightly lumpy, but be sure to not over mix it! Using 2 spoons or a small ice cream scoop, drop dough onto any boiling soup or stew. The dumplings should rest on top of vegetables and meat, DO NOT STIR. Cook uncovered for 10 minutes, cover and cook another 10 minutes. For variety you can add herbs of your choice to the flour mixture before adding the milk. |
