| Zucchini Bread 2 cups grated zucchini 3 eggs 2 cups sugar 1 cup vegetable oil 3 tsp. vanilla 3 cups sifted all purpose flour 1 teaspoon baking soda ¼ tsp. baking powder 1 tsp. salt 2 tsp. cinnamon 1 cup chopped nuts Preheat oven to 350 Grease and flour two 9 x 5 x 3pans. Measure into a medium bowl, flour, salt, soda, baking powder and cinnamon, mix and set aside. Chop nuts and set aside. Grate zucchini, seed if they are large. In a large mixing bowl with an electric mixer, beat eggs until foamy. Add sugar gradually and beat until thick. Add vanilla and oil, blend. Add dry ingredients, blend just until moistened. Fold in the zucchini and nuts. Pour into prepared pans. Bake in a 350 oven for 50 - 60 minutes (test for doneness). If you use smaller pans they may only take 45 minutes. Cool 10 minutes, then remove from the pan and cool on a rack. Freezes beautifully. Recipe can be cut in half for one loaf or two small -- use 2 eggs for half recipe. |
