SOS  - Creamed Chipped Beef

4 T butter
1 small onion, diced
4 T flour
2 cups milk
3 - 2 oz. pkg. chipped beef,*  cut or torn into bite size pieces
salt and pepper to taste
1 can peas, drained (optional)

In a medium saucepan, over medium high heat, melt the butter.   Add the onions and cook until translucent.  Do not brown.   Stir in the flour and cook for 2 minutes, do not brown.  Add the  milk and the chipped beef.  Cook until thickened, stirring  frequently.  Season to taste with salt and pepper.   Add the peas  and heat through. 
Serve over toast or biscuits.

*Chipped beef  (also known as Dried Beef) comes in jars or  pouches (like Buddig).  Use your favorite kind.
