Make your own bread crumbs….
As you come to the end of the loaf of bread, don’t throw away that heel.  Put it on a baking sheet placed in the oven.  Turn the oven light on and leave it overnight.  Check for dryness in the morning.  When dry, place in a zip lock bag and continue adding until you have enough to grind in the food processor.  After grinding, put into an airtight jar or container and store in a cool dry place.  Continue this practice and you’ll have more than enough bread crumbs for coating foods for frying and topping those casseroles.
Buttermilk in a Pinch
If your recipe calls for buttermilk and you don't have any on hand, you can make a substitute for baking and pancake and waffle batters.  Combine 1 tablespoon of vinegar or lemon juice with 1 cup of milk and let stand for 5 minutes before using.  Use what you need and refrigerate the rest.
If you have some store-bought buttermilk, you can stretch it by putting the last few ounces in a clean jar and top it off with regular milk.  Cover with the lid and let it sit on the counter overnight or until it thickens. Refrigerate. Use as needed.
